This meatloaf recipe uses almond flour-based bread crumbs high in protein, preferably grass fed lean ground beef, eggs, spices, and homemade ketchup. My Paleo Whole30 compliant homemade ketchup is sweetened with date paste.

You can use a Keto Low-Carb and Paleo ketchup. The recipe is shown below. If you are going Paleo Whole30 you can also use date paste rather than coconut sugar. This ketchup topping is made with tomato paste and sweetened with date paste. Dates have natural sugar, but more importantly, they are high in fiber. This fiber is beneficial for blood sugar control. Beef primarily works better with red wine. Choose a red with a smooth texture and not too much tannin. Make sure the wine is big in weight (13.5 to 14% alcohol) to stand up to the weight and pleasant fattiness of beef.

Keto Low-Carb Paleo Ketchup:
1 cup tomato paste
1 cup water
1/4 cup erythritol (Keto Low-Carb) or coconut sugar (Paleo)
3 tbsp white vinegar
1 teaspoon sea salt
1 teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon paprika
Pinch ground cloves
Pinch dried mustard
¾ cup Keto Low-Carb Paleo Ketchup (recipe above)
3 cloves garlic
1 tablespoon olive oil
1 pound grass-fed ground beef
½ pound ground pork
½ cup Paleo Whole30 bread crumbs*
1 teaspoon black pepper

To make ketchup, in a pot combine all ingredients and stir well. Simmer on low for 30 minutes. Adjust seasonings to your preference. Transfer ketchup to a blender and blend until smooth. Transfer ketchup to a large sterilized glass jar. Store in the refrigerator until needed.
To make meatloaf preheat oven to 350 F. In a food processor or blender add onion, garlic, and olive oil. Pulsate until finely chopped. Measure all other ingredients and place in mixing bowl with onion/garlic mixture. Mix all ingredients together, except for ketchup. Spray a baking dish with avocado non-stick cooking spray. Place meatloaf mixture into the baking dish. Coat meatloaf with ketchup. Bake until an instant-read thermometer registers 160 degrees F, about 45 to 55 minutes. Let meatloaf rest for about 10 minutes before slicing and serving. Serve with mashed cauliflower with plant-based butter.
