You have got to try this absolutely DELICIOUS dessert! FROZEN YOGHURT BERRY PIE!!!
You can make this frozen dessert from Lebneh – a Mediterranean cheese made from strained plain (no sugar added) yoghurt or from no-sugar-added Greek yoghurt. I like making this dessert from both, depending on what is available in my refrigerator. Lebneh creates a dense tasting experience because of the cheese being dense.
WHAT ARE THE NUTRITIONAL VALUE AND HEALTH BENEFITS OF KETO LAZY FROZEN YOGHURT BERRY PIE?
Greek yoghurt is a fantastic source of calcium, potassium, protein, zinc, and vitamins B6 and B12. What distinguishes Greek yoghurt is its thicker, creamier texture because the liquid whey is strained out. This is also the process used to make Labneh (yoghurt cheese).
This pie is also filled with Keto-friendly fresh berries — raspberries, blackberries, and blueberries. All these fruits are considered low glycemic.
Raspberries provide more than half of your RDI for vitamin C, a water-soluble nutrient essential for immune function and iron absorption. Raspberries also possess small amounts of Vitamin A, thiamine, riboflavin, vitamin B6, calcium and zinc (1). Raspberries are a good source of fibre and vitamin C.
Blackberries contain high levels of antioxidants, such as anthocyanins. Antioxidants help fight against the adverse impact of free radicals in your body. Free radicals can damage cells thereby speeding up the aging process and contributing to other health conditions, such as cancer and heart disease.
Blueberries can help heart health, bone strength, skin health, blood pressure, diabetes management, cancer prevention, and mental health. One cup of blueberries provides 24% of your recommended daily allowance of vitamin C.
WHAT INGREDIENTS DO YOU REQUIRE TO MAKE KETO LAZY FROZEN YOGHURT BERRY PIE?
For this recipe you’ll need the following ingredients:
No-sugar-added Greek yoghurt or labneh (yoghurt cheese)
1 tablespoon stevia
1 teaspoon vanilla extract
1 pint of fresh raspberries
1 pint of fresh blackberries
1 pint of fresh blueberries
Sugar-Free chocolate or sugar-free maple syrup
HOW DO YOU PREPARE KETO LAZY FROZEN YOGHURT BERRY PIE?
Start with either no-sugar-added Greek yoghurt or Labneh (yoghurt cheese). Pour the labneh or yoghurt onto a 9” pizza tray lined with parchment. Spread out the labneh or yoghurt to the edges, making sure it’s even. Add all the berries, seeds and nuts you like. If you don’t want chocolate, drizzle in sugar-free maple syrup.
Here is the fun part. You can add your sugar-free chocolate drizzle before or after freezing, depending on your taste buds.
To make things easy I add one of my already prepared and favourite drizzles called O’Sesame Keto Chocolate Spread. This product is made from black sesame seeds but tastes so much like chocolate.
If you prefer to add nuts and seeds to your pie rather than fruit, drizzle with peanut or almond butter. I LOVE the Fatso Salted Caramel Peanut Butter. OMG it’s so rich and delicious.
If you make your dessert with nuts and seeds drizzle with O’Sesame AND Fatso Salted Caramel Peanut Butter. The combinations are endless!
If using yoghurt to make this dessert, choose a 750g tub of your favourite no-sugar-added Greek yoghurt. Add 1 tablespoon stevia and 1 teaspoon vanilla extract. I use a pint each of raspberries, blueberries, and blackberries.Print
