Ingredients

  • 1 whole chicken (about 4 pounds)
  • 1 can (13.5 oz) full-fat coconut milk
  • Juice of 2 limes
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons coconut aminos
  • 2 tablespoons sugar-free maple syrup
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • 1 lime cut into slices
  • Fresh cilantro for garnish

Instructions

  • Preheat the oven to 400°F (200°C).
  • Place the whole chicken breast-side down on a cutting board.
  • Using kitchen shears or a sharp knife, cut along each side of the chicken’s backbone and remove it.
  • Flip the chicken over and press down on the breastbone to flatten it. You can also ask your butcher to do this for you.
  • In a bowl, combine coconut milk, lime juice, minced garlic, grated ginger, coconut aminos, SF maple syrup, turmeric, salt, and pepper. Mix well.
  • Place the flattened chicken in a skillet. (Why dirty another dish?)
  • Pour half of the marinade over the chicken, ensuring it’s well-coated. Add fish lime slices on top of the chicken.
  • Marinate in the refrigerator for at least 2 hours or overnight for more flavor.
  • Preheat the oven to 400°F (200°C).
  • Place the marinated chicken on a baking sheet lined with parchment paper.
  • Brush the chicken with some of the reserved marinade.
  • Roast in the oven for about 45-50 minutes or until the internal temperature reaches 165°F (74°C).
  • Baste the chicken with the remaining marinade every 15 minutes for a flavorful glaze.
  • Once done, let the chicken rest for a few minutes before carving.
  • Garnish with fresh cilantro.
  • Slice and serve the flattened coconut lime chicken with your favorite side dishes.
