Description
Indulge in the deliciousness of Keto Maple-Walnut Frozen Custard. This low-carb treat is perfect with yummy non alcoholic wine.

- 2 cups coconut cream
- 6 large egg yolks
- 1/4 cup Swerve Brown Sugar (or favorite sweetener)
- 1 teaspoon maple extract
- 1 teaspoon glycerine (optional)
- 1/2 cup chopped walnuts, toasted
Instructions
- Toast walnut pieces in a dry frying pan. Set aside and let cool.
- In a bowl, combine egg yolks, granulated sweetener, maple extract, and glycerine (optional). Set aside.
- Using a blender, blend until smooth and frothy.
- Pour coconut cream into a pot and heat, whisking constantly, to a light simmer. Remove coconut cream from heat.
- Pour coconut cream into a bowl and set it beside the blender.
- Slowly pour the hot coconut cream, 1 tablespoon at a time, into the egg yolks, all the while keeping the blender going. Do this 5 or 6 times to mix the eggs with the hot cream without the eggs cooking and clumping.
- Transfer the custard to a bowl coated in melted coconut oil (to prevent sticking).
- Set the custard in the freezer and freeze for about 3 to 4 hours, depending on the temperature of your freezer.
- When the custard becomes thick, fold the toasted walnuts into the frozen custard.
- Continue to freeze until hardened, or enjoy without walnuts if desired.
