This led me to a deeper understanding of human preferences—people often gravitate towards what they know.

It’s light and fluffy, making it suitable for sandwiches or as a pizza base.  This is a great choice is you’re looking to keep your carbs super low and can get that pizza craving handled by the toppings only.
  4. Shredded Chicken Crust: This crust uses shredded cooked chicken mixed with cheese and eggs, resulting in a high-protein, low-carb option. It has a distinct chicken flavor and is very low in carbohydrates.  This is my favorite pizza crust.  I have to be careful, however.  Our German Shepard Oscar always knows when I’m making this crust.  He knows the routine and the smells.  Once I left the kitchen for only a minute and came back to find no crusts cooling on the counter!
  5. Zucchini Crust: Grated zucchini mixed with cheese and eggs forms a moist and flavorful crust. This option is great for those looking to incorporate more vegetables into their diet.  This is another version where the toppings will satisfy your pizza craving, but not the crust…in my opinion!

  1. Portobello Mushroom Caps: Large portobello mushrooms can serve as individual pizza bases. They provide a hearty, meaty texture and are very low in carbs, making them ideal for mini pizzas.  I’ve made these caps a few times and they are absolutely yummy.  My husband Shawn is not a fan, however.  Dislikes whole mushrooms.
  2. Eggplant Slices: Thick slices of eggplant can be baked or grilled to create a sturdy base for toppings. They are low in carbs and add a unique flavor to your dish.  This is another dish I make for myself as Shawn is not a fan of eggplant. 
  3. Almond Flour Crust: Using almond flour as the main ingredient, this crust is similar to traditional pizza crusts but with significantly fewer carbohydrates. It can be combined with eggs and cheese for added texture and flavor.
  4. Psyllium Husk Dough: This dough utilizes psyllium husk for binding, combined with almond flour and eggs, to create a low-carb crust that mimics the texture of traditional bread.  I love this crust as I’m a huge fan of psyllium.  I prefer psyllium over flax.  
  5. Cheese-Based Crusts: Simple cheese crusts can be made by melting cheese and mixing it with eggs and seasonings. This results in a crispy, savory base that is extremely low in carb.  Again, this crust is not heart-healthy savvy, in my opinion.
  6. Low-Carb Tortilla Wraps:  (3 g net carbs per wrap) These wraps can serve as a super thin crust for your low-carb pizza.  They are often sold as small tortillas.  You can even find these in Walmart.  I’ve made pizza with these wraps countless times.  They are always delicious.

Pepperoni and Cheese:

This classic combination remains the most popular, with pepperoni being the favorite topping for many. A survey indicated that 64% of respondents enjoy pepperoni on their pizzas, making it a staple in American pizza culture.  Both the pepperoni and cheese are fatty and so demand a red wine with some weight to match.  It’s challenging to find a NA red with loads of body.  The reason is that the element that normally provides the body, alcohol, has been removed.  So hunt for a smooth red that may be medium bodied, but with lots of fruit character and is easy in tannin and astringency. 

The reason is that heat and spice can make the tannin and astringency in a red taste more pronounced.  So rather than the wine cleaning your palate in between bits, a sip would accentuate the heat and spice.   That’s not putting your wine to good use.  If you cannot. find a smooth red, go for a white with some sweetness.  Sweetness offsets heat and and spice and will, with the help of the acidity, clean your palate between bites.  

Also if you’re focused on heart health, stay away from pepperoni.  Super high in saturated fat and sodium.  Go for turkey or chicken based versions.

Another favorite is the combination of pepperoni and sausage, which appeals to meat lovers.
