I love making these little, spicy Keto Bacon-Wrapped Chorizo for Shawn and me. We can devour quite a few before dinner.  They are tasty, filling, and addictive.  It is possible to find sugar-free sausage, mostly at butcher shops.  The good news is that authentic Chorizo is sugar-free. Imitations may have sugar and wheat. Also choose sugar-free bacon.

Keto Bacon-Wrapped Chorizo has some nutrition.  The nutritional value of this sausage can vary depending on the ingredients used and the method of preparation.

Due to the chorizo, this hors d’oeuvre is both fatty and spicy.  The bacon is salty. 

WHAT NON ALC WINE HARMONIZES WITH KETO BACON-WRAPPED CHORIZO?

Can you pair wine with Keto Bacon-Wrapped Chorizo?  The fattiness from the bacon and sausage and spiciness from the sausage calls for an off-dry white wine. In following a Keto diet or in living a low-carb lifestyle, we don’t want to use up your carbs on a glass of non alcoholic wine. You have a couple of options. 

Drink whatever wine you like (as long as it’s bone dry) and don’t worry about pairing the non-alc wine to dish. Enjoy your non-alc wine the way you like it. If you like to create harmony between the wine and the food, you’ll need some sweetness in the wine to offset the heat and spice.  Add a pinch of monk fruit sweetener to your glass.  Choose a white like de-alcoholized Riesling or Gewurztraminer or a pink rose. These varieties taste great when bone dry or sweet.  So they taste great with the added sweetener.  The non alcoholic wine’s sweetness will nicely offset the heat and spice.

WHAT EQUIPMENT DO YOU NEED TO PREPARE THIS RECIPE?

  • Oven: To preheat and bake the bacon-wrapped sausages.
  • Baking Pan: An oven-proof pan to place the bacon-wrapped sausages in during baking.
  • Non-stick Cooking Spray: To coat the baking pan and prevent sticking.
  • Aluminum Foil: To cover the bacon-wrapped sausages during baking.
  • Knife: To cut the cooked bacon-wrapped sausages into 1-inch pieces.
  • Toothpicks: To secure the bacon edges after cutting into pieces.

HOW DO YOU PREPARE KETO BACON-WRAPPED CHORIZO?

Wrap sausage in bacon, overlapping the sides so that the whole sausage is covered.

 

Keto Bacon Wrapped Chorizo

Repeat the process for all sausages. Depending on the size of the sausage, you’ll need 3 to 4 pieces of bacon per sausage. It’s okay if the bacon layers are thick. Set aside. Repeat process for other 2 sausages.

When crisp, remove from oven and cover in foil. Set back into the oven and cook another 10 to 12 minutes to ensure sausage is cooked inside. Remove from oven and let cool.

Instructions

  • Preheat oven to 350 F.  Wrap sausage in bacon, overlapping the sides so that the whole sausage is covered.  Depending on the size of the sausage, you’ll need 3 to 4 pieces of bacon per sausage.  It’s okay if the bacon layers are thick.  Set aside.  Repeat process for other 2 sausages. 
  • Spray oven-proof pan with non stick cooking spray.  Set sausage into pan.  Cook for 20 minutes until bacon is crispy. 
  • Turn the sausage so that all sides are the same in crispness.  When crisp, remove from oven and cover in foil. 
  • Set back into the oven and cook another 10 to 12 minutes to ensure sausage is cooked inside.  Remove from oven and let cool. 
  • Cut into 1-inch pieces, securing bacon edges with toothpicks.
