Keto Low-Carb Bacon-Wrapped Salmon Asparagus is so delicious!

On this Keto journey, Shawn and I enjoy fresh salmon a few times a month.  It’s a fabulous source of healthy fat and protein.  The recipe for Bacon Wrapped Salmon with Tarragon popped up on my email news channel.   The recipe reminded me of a salmon dish I live to prepare in the summer on the BBQ.  I wrap in individual foil wraps salmon sitting on a bed of asparagus.  I decided to combine these 2 recipes and prepare bacon-wrapped salmon and asparagus.

The most challenging part of this recipe is finding compliant bacon.  This is bacon that is free of sugar, nitrates, and fillers, carrageenan, or MSG.

Sodium nitrate is used to deter the growth of bacteria.  It is used in the curing formula and is a preservative that’s used in the processing of bacon, jerky, and luncheon meats.  Studies show that eating too much of these products dramatically increases your sodium intake, as well as increases your heart disease, narrowing of the blood vessels, and hardening of the arteries.

You can make your own bacon at home or choose certain brands that offer nitrate-free bacon.  Look for packages that say “uncured bacon.”  Some of the brands include:

The machine will shut off automatically at the right time. My proteins are crispy on the outside and super juicy

HOW DO YOU PREPARE KETO LOW-CARB BACON-WRAPPED SALMON ASPARAGUS?

Place salmon on cutting board. Clean and snap asparagus.

Cut salmon into 4 ounce fillets.

KETO BACON WRAPPED SALMON & ASPARAGUS

Place about 6 asparagus spears under each salmon filet.

Wrap in bacon, using about 3 to 4 pieces, and secure bacon with toothpicks if needed.

Place wrapped fillets on a parchment baking sheet.

Bake at 400F for about 25 to 30 minutes until bacon is crispy. Place under broiler to make crispier if desired.

Keto Low-Carb Bacon-Wrapped Salmon Asparagus is no doubt one of the easiest and tastiest dishes I prepare for my husband and I on a regular basis.  You can serve this salmon during the week or for a special loved one.  Passes off as “gourmet.”  Loads of richness from the healthy fat of salmon and enjoyable fat from the sugr-free bacon.  I added asparagus to make sure you get your greens!  LOL.  The recipe includes salmon, sugar free bacon, asparagus, and black pepper.  You get enough saltiness from the bacon.


Ingredients

1 pound salmon filet (cut into 4 fillets, each 4 ounces)

24 slices sugar-free bacon (turkey bacon for Heart Healthy)

24 asparagus spears, cleaned and snapped

Freshly ground black pepper to taste


Instructions

  • Preheat oven to 400 F.  Line baking sheet with parchment.  Cut filet into 4 pieces, each about 1.5 to 2” wide.  Place 6 asparagus spears under salmon filet.  Wrap tightly in bacon, needing from 4 to 6 pieces each.  Secure bacon with toothpicks if required.  Lay bacon-wrapped salmon on parchment.  Season with black pepper.
  • Bake for about 25 to 30 minutes or until bacon is crispy.  Place under the broiler if you want bacon crispier without drying out the salmon.
