When you taste this Keto Low-Carb No-Bake Raspberry Cheesecake you’ll never know that it’s Keto.  It’s so rich and delicious!  The key is to a whole package of cream cheese to ensure that richness.  I like to use lactose-free cream cheese as it has zero carbs.  I’m not lactose intolerant. I just like the zero carbs!

Choose fresh fruit based on the flavor of the Jello.  Or you can mix and match.  I wanted to use strawberries, but I could not find any sugar-free strawberry jello.  Instead, I used raspberry.

WHAT ARE THE PREDOMINANT TASTE SENSATIONS OF THE KETO LOW-CARB NO-BAKE RASPBERRY CHEESECAKE?

This delicious Keto Low-Carb No-Bake Raspberry Cheesecake is so light and creamy. It is not too sweet. Just right. The slight sweetness nicely offsets the tanginess of the fresh strawberry sauce. The creamy texture of the filling nicely offsets the crunchy texture of the crust. So light and refreshing!

WHAT IS THE NUTRITIONAL VALUE OF KETO LOW-CARB NO-BAKE RASPBERRY CHEESECAKE?

Almond flour is used as the main base ingredient in this crust of Keto Low-Carb No-Bake Raspberry Cheesecake.

ALMOND FLOURAlmond flour is a popular alternative to wheat flour, especially for those following a gluten-free or low-carbohydrate diet. The nutritional value of almond flour is impressive, as it contains a good amount of healthy fats, protein, fiber, and various essential nutrients. A 1/4 cup (28 grams) serving of almond flour contains around 160 calories, 6 grams of protein, 14 grams of fat (mostly healthy monounsaturated fats), 3 grams of fiber, and only 2 grams of net carbs. Almond flour is also a good source of vitamin E, magnesium, and manganese, which are important for several bodily functions, including bone health and energy production.

The high fiber and protein content in almond flour can help you feel full and satisfied, making it a great addition to baked goods and other recipes. Additionally, almond flour is naturally gluten-free, making it a great option for people with celiac disease or gluten sensitivity.

WHAT WINE HARMONIZES WITH KETO LOW-CARB NO-BAKE RASPBERRY CHEESECAKE?

This Keto Low-Carb No-Bake Raspberry Cheesecake is not too sweet. Stay away from dessert wines. In following a Keto diet or in living a low-Carb lifestyle, we don’t want to use up your carbs on a glass of wine.  Why add the extra carbs to your meal when you can find zero Carb wines!  You have a couple of options:

  1. Drink whatever wine you like (as long as it’s bone dry) and don’t worry about pairing the wine to dish. Enjoy your wine the way you like it. 
  2. If you like to create harmony between the wine and the food, you’ll need some sweetness in the wine to match the sweetness in the dessert.  Add a pinch of Stevia or monk fruit sweetener to your glass of wine.  Choose whites like Riesling or Gewurztraminer or a pink rose. These varieties taste great when bone dry or sweet.  So they taste great with the added sweetener.  The wine’s sweetness will nicely match the dessert sweetness.  

Wine Tips: To support your Keto diet or low-Carb lifestyle, choose low-Carb, low-sugar, and low-alcohol wines that are free of additives and artificial coloring.  Include your wine Carb macros as part of your meal.  Remember, your liver will process alcohol before nutrients, pausing ketone creation and slowing the ketosis process. Your body will also metabolize alcohol as fuel before using food. This can slow fat burning and may cause your body to store carbs, fat, and protein as excess body fat.  Alcohol consumption also stimulates the appetite.  So, drink low-sugar, low-Carb, and low alcohol wines in moderation.

WHAT JELLO SHOULD I USE TO PREPARE KETO LOW-CARB NO-BAKE RASPBERRY CHEESECAKE?

For this Keto Low-Carb No-Bake Raspberry Cheesecake recipe, I used 2 packages of Keto Simply Delish Raspberry Jello Dessert.  Basically, this is the same as Jello and with zero sugar.  You can use whatever flavor you desire.  If using thicker dairy milk instead of almond milk you may get away with 1 package of the Jello.

DO I HAVE TO USE WALNUTS TO PREPARE KETO LOW-CARB NO-BAKE RASPBERRY CHEESECAKE?

You do not have to use walnuts for the crust of this Keto Low-Carb No-Bake Raspberry Cheesecake. I prefer walnuts because they are only 3.89 net carbs per cup.  Walnuts are also pleasantly bitter thus nicely offsetting the sweetness of the filling. Pecans are slightly higher and peanuts are almost double the net carbs.  You can use whatever nut your prefer.  Just keep in mind that some nuts are higher in carbohydrates than others.

DO I NEED A FOOD PROCESSOR TO PREPARE KETO LOW-CARB NO-BAKE RASPBERRY CHEESECAKE?

The filling for this Keto Low-Carb No-Bake Raspberry Cheesecake can be prepared in a food processor or with a hand mixer.  It’s a thick mixture, so you may want to use a food processor if you have one.  I love using the hand mixer.  Use a large bowl because mixing can be a messy business.   

DO YOU PUT THE CHEESECAKE IN THE FRIDGE OR FREEZE TO PREPARE KETO LOW-CARB NO-BAKE RASPBERRY CHEESECAKE?

Because you have not added boiling water to the mix, the cheesecake is super thick and can stand on its own.  If you add boiling water to make the mixture more fluffy, you may want to put the cheesecake in the freezer to set. 

DO I NEED TO HAVE A SMALL SPRING FORM PAN TO PREPARE KETO LOW-CARB NO-BAKE RASPBERRY CHEESECAKE?

Blanched almond flour: You can substitute the blanched almond flour for ground almond flour that includes the skin.  It’s certainly healthier!

Walnut pieces: Walnuts can be replaced with pecans or peanuts, whatever you prefer. 

Stevia: You can use any natural sweetener you prefer. 

Unsalted Grass-Fed Butter: Butter can be replaced with coconut oil.

Whipping Cream: You can use dairy or non-dairy whipping cream.  The non-dairy version may require guar gum to help stiffen.

Sugar-free Jello: Any variety of sugar-free Jello will work in this dessert.

Cream Cheese: Hunt for cream cheese with zero carbs just to keep your overall Carb count down as much as possible.

Fresh Strawberries: Strawberries can be replaced with blackberries, raspberries, blueberries or a combination of all of the above. 

HOW DO YOU PREPARE KETO LOW-CARB NO-BAKE RASPBERRY CHEESECAKE?

To prepare your Keto Low-Carb No-Bake Raspberry Cheesecake, in a food processor or blender add walnut pieces and grind them into a powder.  In a bowl combine the ground walnuts, almond flour, sweetener and butter. 

Spray a spring form pan with non-stick cooking spray and then line it with parchment.  (The spray allows the parchment to stick to the sides of the pan.)  Pour nut mixture into the pan and press it to flatten into a crust.  Set in the fridge until needed.

In a large mixing bowl, whip the whipping cream until stiff.  (If the cream won’t stiffen add a ½ teaspoon of guar gum.) Add the two packages of Jello.  Mix well.  Add the cream cheese.  Continue to blend until well incorporated.  The mixture will be thick.  If too thick add a little more cream cheese.  Spoon the mixture into the pan over the crust.  Refrigerate for at least 1 hour to allow setting.

Meanwhile, make the drizzle.  Add 6 fresh strawberries to your blender.  Purée until smooth.  Don’t add anything else.   Plate.  Remove the spring-form pan.  Drizzle in the strawberry purée.  Enjoy.

Description

This Keto Low-Carb No-Bake Raspberry Cheesecake is rich, fluffy, and super easy to prepare. It’s fab in the summer when you can drizzle in Keto-friendly fresh berries. Try strawberries, blueberries, raspberries, or a combination. The flavour of the cheesecake will depend on the Jell-O flavour. The ingredients include almond flour, crushed walnuts, butter, a little stevia, Jell-O, and cream cheese. That’s it! Check out the recipe!

For the Low Carb Crust:

1/4 cup almond flour

1/2 cup walnut pieces

1 tablespoon stevia or monk fruit sweetener

2 teaspoons unsalted butter, melted (grass-fed for heart health)

For the Filling:

1.5 cups whipping cream (plus 1/2 tsp guar gum if needed) (soft tofu for heart health)

2 packages of sugar free Jell-O (or flavour of choice)

1 package of cream cheese (low-fat for heart healthy)

For the topping:

6 fresh strawberries, mashed


Instructions
