I have a feeling that you will also love this Keto Salted-Caramel Creme Brulee!  I love the juxtaposition of textures — the cold velvety custard contrasting the warm caramel topping. Like everyone else who is addicted to this dessert, the best part is the moment of breaking into the caramel shell.

WHERE DID CRÈME BRÛLÉE ORIGINATE?

It’s hard to say where this delicious dessert originated. France, England, and Spain all claim to be the source of origin for Crème Brûlée. If we think in terms of ‘evidence’ validating its origin, we might side with the French. The first printed recipe for this burst cream dessert appeared in the 1691 edition of the French cookbook Le Cuisinier Royal et Bourgeois by Francois Massialot, a cook at the Palace of Versailles.

WHAT IS CRÈME BRÛLÉE?

This Keto Salted-Caramel Creme Brulee is a rendition of the classic Crème brûlée, also known as burned cream, burnt cream, or Trinity cream.  It is similar to Crema Catalana, is a dessert consisting of a rich custard base topped with a layer of hardened caramelized sugar.

Is there a certain way to prepare Keto Low-Carb Salted-Caramel Creme Brulee?  There is a great deal of hoopla from experts about how Crème Brûlée custard should be cooked. Ingredients

  • 1 teaspoon caramel extract
  • Pinch of salt
  • 1 cup heavy cream
  • 3 tablespoons Swerve Brown Sugar, divide

Instructions

  • Preheat Oven: Preheat your oven to 300°F (150°C).
  • Prepare Ingredients: Gather all the necessary ingredients and equipment.
  • Mix Egg Yolks: In a mixing bowl, whisk together the egg yolks, caramel extract, and a pinch of salt until well combined.
  • Heat Cream Mixture: In a saucepan, heat the heavy cream and 2 tablespoons of Swerve Brown Sugar over medium heat. Stir occasionally and ensure it doesn’t boil.
  • Combine Mixtures: Once the cream is heated but not boiling, slowly pour it into the egg yolk mixture while whisking constantly. This tempering process ensures the eggs don’t scramble.
  • Divide Mixture: Divide the resulting custard mixture evenly among 4 ramekins.
  • Prepare Water Bath: Place the filled ramekins in a baking dish. Fill the baking dish with about 1 inch of water, creating a water bath around the ramekins. This gentle cooking method helps prevent the custard from curdling.
  • Bake: Carefully transfer the baking dish with the ramekins to the preheated oven. Bake for approximately 40 minutes or until the custard is set but still slightly jiggly in the center.
  • Caramelize Sugar: Remove the ramekins from the oven and sprinkle each with the remaining 1 tablespoon of Swerve Brown Sugar. Turn on the broiler in your oven and place the ramekins under it until the sugar caramelizes and forms a golden crust. Keep a close eye to prevent burning.
  • Cool and Chill: Once caramelized, remove the ramekins from the oven and allow them to cool slightly at room temperature. Then, refrigerate them until chilled and ready to serve.
  • Serve: Before serving, you can optionally garnish with a sprinkle of additional Swerve Brown Sugar or a dollop of whipped cream if desired.
