I love this Keto Low-Carb BLT Tart! Tomatoes are one of my favorite fruits. Yes, they are a. nightshade food. Shawn and I have issues with tomatoes in our diets.  In fact, we love them.

I saw a plethora of tomato tart recipes on YouTube and decided to make one using my Keto Low-Carb dough recipe.

New topic…in my past career as a food and wine journalist and author I would hunt for orgasmic food and wine partnerships.  I searched for combinations that would transform a meal into a culinary adventure.  Often, I would think of wine and then find a recipe to match.

WHAT IS THE NUTRITIONAL VALUE OF THIS KETO LOW-CARB BLT TART?

Campari Tomatoes:

For this Keto Low-Carb BLT Tart I used Campari tomatoes.  They are my favorite! Often referred to as the tomato lover’s tomato, the Campari variety is slightly bigger than the cherry tomato. You’ll find these tomatoes still on the vine in the grocery store. This variety offers a ‘vinous’ quality to the flavor, giving the perception of freshly picked tomatoes.

This vinous quality earns the Campari an extraordinary place in our culinary repertoire. Cherry tomatoes are ideal for hors d ‘oeuvres and to toss in salads.

Regular-sized tomatoes can be used in cooking. But the Campari is just the right-sized tomato to slice for appetizers, sandwiches, pasta, and as a pizza topping “Compari” is actually a brand name for a type of tomato that was developed in Europe and is now grown in various parts of the world.

The Campari is aromatic, sweet, firm, and juicy. Its best quality, in my opinion, is low acidity, making this tomato a friendly ingredient in dishes to be paired with white wine or a light, fruity red wine. The natural acidity in fresh tomatoes typically demands the crisp acidity of white wine. Tomatoes, once cooked or slow-roasted, can work with red wine. But the Campari, when fresh, can complement Burgundy, Pinot Noir or Gamay.

Campari tomatoes should never be refrigerated, as cold temperatures tend to cause them to lose their flavor and become pulpous. They should be stored at room temperature, with stems up to avoid bruising. Keep these little gems out of sunlight as well, otherwise, they will dehydrate.

This Keto Low-Carb BLT Tart is exactly that!  Tart!  The fresh tomatoes give this dish a predominant taste sensation of tanginess.  This shines through above all other flavors.  The bacon makes this tart salty and filled with umami, the 5th taste sensation of roundness and depth of flavor.  The garlic adds pleasant bitterness.  The crust is moist and crunchy too.  A delicious combination.

WHAT NON ALC WINE HARMONIZES WITH KETO LOW-CARB BLT TART?

I’m telling you..the partnership of Sauvignon Blanc paired with Keto Low-Carb BLT Tart is nothing short of heavenly! With the predominant taste sensation of this tart being tanginess from the tomatoes, you need a crisp dry, non alcoholic white to match.  The non-alc wine’s tanginess will match the tanginess in the tart.  The wine’s crisp acidity will also nicely offset the saltiness in the tart from the bacon.

WHAT EQUIPMENT DO YOU NEED TO PREPARE THIS RECIPE?

Equipment Needed:

HOW DO YOU PREPARE KETO LOW-CARB BLT TART?

Proof yeast.

 

Add proofed yeast mixture to bowl with dry ingredients. Mix well with hands until dough forms.

 

Let dough rest for 2 hours, bowl covered with damp cloth.

 

Using wet fingers, spread dough out on baking sheet sprayed with non-stick cooking spray or oiled. Use your fingers to spread dough.

 

Crust for Keto BLT Tart

Par-bake crust for 10 minutes. Remove from oven. Let cool.

 

Spread mustard onto crust.

 

Arrange tomatoes on tart over mustard.

 

Cover entire crust with tomatoes.

 

In a blender or Magic Bullet add olive oil and garlic and puree until mixture is chunky.

 

Keto BLT Tart

Cover tomatoes with bacon and drizzle garlic oil over tart.

 

Keto BLT Tart

Bake until tart crust is golden and tomatoes are roasted. Remove from oven. Let cool. Cover with lettuce.

 

Keto Low-Carb BLT Tart

Add mozzarella to tart and melt under broiler if desired. Serve hot.

Description

Try this delicious Keto BLT Tart recipe with Campari tomatoes. A low-carb and keto-friendly dish perfect for a culinary adventure!


Ingredients

Scale

Garlic Mixture:

2 tablespoons olive oil

1 head of garlic, peeled and chopped

Proof Yeast:

1 tablespoon dry yeast

1 teaspoon raw honey

Make Dough:

2 cups almond flour

1 teaspoon pink salt

1 teaspoon baking powder

1 teaspoon garlic powder

1 large egg

Toppings:

1/4 cup Dijon mustard

3 Campari tomatoes (or small tomatoes), thinly sliced

6 slices sugar-free bacon (turkey bacon for Heart Healthy)

1 cup shredded mozzarella (partly-skimmed for Heart Healthy)

1/4 head Boston Lettuce, broken apart


Instructions

  • *The yeast eats the sugar so no need to count carbs in honey.
  • Preheat oven to 350 F.  In a food processor or Magic Bullet, add garlic and olive oil.  Puree until smooth.  Set aside.
  • To proof yeast, Add the yeast to warm water. Water should be between 100 and 110 degrees.
  • Sprinkle the yeast and sugar on top of the water and stir. The sugar helps activate and feed the yeast. After a 10 minutes, your yeast should be bubbly.
  • In a large bowl, add proofed yeast mixture, almond flour, salt, baking powder and garlic powder.  In a small bowl, whisk the egg. With a rubber spatula, mix the egg into the flour mixture, then knead the crumbly mixture into a uniform, smooth dough. If the mixture is dry and crumbly (that you can’t knead it into a smooth dough), add a tablespoon of water at a time, until it’s slightly sticky.  Let dough sit, covered, for 2 hours.
  • Transfer dough to a baking sheet sprayed with non-stick cooking spray or coated with olive oil.  Using wet fingers spread out the dough evening on the tray making an edge around the crust.   Transfer to the oven and par-bake for 10 minutes.  Remove from oven and let cool.
  • Spread Dijon mustard over crust.  Slice tomatoes and set them, overlapping each other on the crust.  Fill the entire crust with tomatoes.  Sprinkle bacon on tomatoes.  Spoon garlic olive oil mixture over tart.
  • Cook for 45 to 50 minutes until tomatoes are roasted and the crust is golden.  If desired, now add shredded mozzarella to top of tart.  Continue to cook until cheese is melted. Remove from oven.  Let cool.  Add lettuce on tart before serving.
