This Keto Coconut Lime Chicken is, by far, one of the easiest dishes to prepare once you discover the easy art of flattening a chicken.  I love fattening chickens.  A flatten chicken looks so much better on the table when entertaining guests.  It’s also delicious when grilled on the BBQ.  The meat gets cooked evenly because the whole chicken is basically covering the pan.  The flattened chicken is prepared using a method called “spatchcocking” or “butterflying.”  This method has roots in culinary traditions aimed at optimizing the cooking process.

While the exact origin is unclear, spatchcocking has been used for centuries. The term itself is believed to have Irish roots, with “dispatching the cock” referring to preparing poultry for cooking. This method involves removing the backbone, allowing the chicken to lay flat for more even cooking. Over time, it became popular for its ability to reduce cooking time and ensure a crispy skin, making it a favorite among home cooks and chefs alike.

HOW DO YOU PREPARE KETO COCONUT LIME CHICKEN

Keto Coconut Lime Chicken

Preheat the oven to 400°F (200°C). Place the whole chicken breast-side down on a cutting board. Using kitchen shears or a sharp knife, cut along each side of the chicken’s backbone and remove it. Flip the chicken over and press down on the breastbone to flatten it. You can also ask your butcher to do this for you.

 

In a bowl, combine coconut milk, lime juice, minced garlic, grated ginger, soy sauce, fish sauce, honey, turmeric, salt, and pepper. Mix well.

 

Place the flattened chicken in a large skillet. Pour half of the marinade over the chicken, ensuring it’s well-coated. Add lime slices. Marinate in the refrigerator for at least 2 hours or overnight for more flavor.

 

Keto Coconut Lime Chicken

Preheat the oven to 400°F (200°C).
Place the marinated chicken on a baking sheet lined with parchment paper. Brush the chicken with some of the reserved marinade. Roast in the oven for about 45-50 minutes or until the internal temperature reaches 165°F (74°C). Baste the chicken with the remaining marinade every 15 minutes for a flavorful glaze. Once done, let the chicken rest for a few minutes before carving. Garnish with fresh cilantro. Slice and serve the flattened coconut lime chicken with your favorite side dishes.

  • 2 tablespoons sugar-free maple syrup
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • 1 lime cut into slices
  • Fresh cilantro for garnish

Instructions
